2007 Pavie from Chateau Pavie, Saint-Émilion, Bordeaux

Embark upon a sensory journey with the 2007 Pavie from Chateau Pavie, an exemplar of Saint-Émilion's oenological poetry. The year 2007 stands as a testament to the winemaker's artisanal resilience amidst Bordeaux's climatic challenges, making any resulting triumphs all the more noteworthy.

A Vintage Carved by Contrast

The narrative of 2007 for Bordeaux was one woven from the threads of a temperamental climate, wherein an unseasonably warm April was followed by a cooler than expected summer period. Amidst these meteorological oscillations, however, Chateau Pavie's vineyards displayed remarkable fortitude, producing grapes that culminated in an illustrious vintage. The 2007 Pavie manifests this journey through its vibrant structure and surprising longevity—a connoisseur's vintage that invites introspection.

Investment Merits and Palate Pleasures

The craftsmanship of Gerard Perse is indelibly imprinted in the terroir-expressive character of the 2007 Pavie. Intertwining complexity with balance, the wine unfurls layers of ripe berries harmonised with an aromatic bouquet that whispers of truffles, earth and a mellow undertone of oak-spiced vanilla. Robust yet refined tannins put forth a palate that is gentle yet persistent, forecasting a rewarding ageing potential.

In the lexicon of fine wine investment, such nuanced vintages not only stir the soul of collectors but bolster their portfolio. The 2007 Pavie from Chateau Pavie embodies this dual allure—finesse bottled both for the sanctum of cellars and the currency of market appreciation.

Summation of Distinction

To commit oneself to a bottle of the 2007 Pavie is to indulge in a storybook vintage that overcame adversity to present a tapestry of taste fit for the sage investor and connoisseur alike. Amidst the canvas of Bordeaux’s varied spectrum, it stands as a testimony to both nature’s unpredictability and mankind's adaptability—ensuring its position as one of the most engaging narrations in one's enological collection.

Along with Lafite Rothschild, Ausone, and l’Eglise Clinet, Pavie is one of the wines of the vintage. An inky/purple color is accompanied by notes of creme de cassis, kirsch, graphite, and toast. A massive wine for the vintage, the 2007 Pavie is very full-bodied with extraordinary intensity, power, and richness. Its structure and tannin suggest 2-4 years of cellaring is required, and it should evolve for 25 years thereafter ,an unusually long aging curve for most 2007s. Yields were 25 hectoliters per hectare, and the wine is a classic blend of 70% Merlot, 20% Cabernet Franc, and 10% Cabernet Sauvignon. The natural alcohol level came in at 14%.

Tasted blind at the Southwold 2007 tasting. This is more refined and composed on the nose compared to its peers: pure cassis, blueberry, a hint of wild mint and mocha. The palate is medium-bodied with a spice-tinged entry, tensile tannins, a nice bitter edge complementing the thick chewy fruit. It is quite powerful on the tannic finish, perhaps a more burly Pavie but with good grip and persistency. Therefore I think this is one of the few 2007’s that deserve time in the cellar. Tasted January 2011.

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Pavie has a very clear, almost refulgent color in the glass. The bouquet is well defined with plush crushed strawberry, raspberry, cedar and mint aromas on the nose, almost Margaux-like in style thanks to a floral tincture. The palate is medium-bodied with grainy tannin, cedar and graphite-tinged black fruit that gently grips the mouth. There is impressive structure here, a Pavie that seems to have firmed up in recent years. As I suggested in my previous note, this is one of the few Saint Emilion wines that merit cellaring. Tasted February 2017.
